quinoa stir fry with chilli & lime dressing

This is currently one of my favourite meals. It originated from the Grains as Mains by Laura Agar Wilson cookbook, which I can’t recommend enough, however I’ve altered the recipe slightly. It’s super easy to make and honestly one of the most delicious stir fries i’ve ever had.

It’s more than filling to have on its own – though I’ve decided to jazz it up with some steak today. Chicken and salmon also work very well.

Serves 2
150g quinoa
sesame oil
1 carrot
kale
spinach
red onion
steak/salmon/chicken
for the dressing
3 tbsp soy sauce
3 tbsp honey
juice & zest of 1 lime
1 red chilli

Start off by cooking the quinoa as per the instructions on the packet.
Shred the carrot & red onion and add this into a wok with the sesame oil to soften. Once the quinoa is cooked add this into the wok and sir some kale through.

Simply make the dressing by mixing all the ingredients together.

Serve the quinoa on a bed of spinach and top with the cooked steak (or whatever else you fancy) and generously drizzle the dressing all over. I like to serve mine with some extra lime on the side.

      1. Same as me! Do you have any lenses for it? I haven’t yet, but I have my eye on a wide angled lens!

      2. I’ve not got any lenses yet, no. I’ve only had the camera for a few months. I will probably invest in some new lenses soon! You’ll have to let me know how you get on if you get a wide angled lens. I do like the look of those!

      3. I will do! Although it will be a little while before I can afford one as they start at about £200! I like your interview you did, I really want to bake a sourdough loaf now!
