The avocado. Popular amongst ‘grammars, bloggers and health food fanatics, it seems as though the simple avocado is here to stay and with all their health benefits, its really no surprise. Packed full of healthy fats, potassium and enough vitamins to shake a stick at its easy to see why they’re hailed a ‘superfood’.
Though I have a secret, I’m not the biggest fan…shock horror I know! (Should I even be admitting to this being a food blogger?!) I don’t dislike them, I generally have one or two kicking about my fridge. It’s just that I really struggle when eating them on their own. I often see recipes for chilli or tacos and saddled next to them is a big old hunk of grilled avocado. This is a step too far for me me. Their creamy, buttery taste (which lets face it, sounds like heaven) is for some reason, a little much for my stomach to handle.
However, avocado on toast….now we’re talking. This is actually one of my favourite meals, which I know doesn’t make much sense given what I’ve just said, but pairing avocado with lashings of olive oil, lemon & chilli (and of course some bloody good bread) is a match made in heaven.
The recipe below is not for the faint hearted, it really packs a punch. Though you can of course alter it to suit your taste buds.
1/2 red chilli
Salt & pepper
Good quality seeded bread
Simply half the avocado and scoop out the flesh, mash it in a bowl using a fork and add in the olive oil, lemon, salt & pepper.
Toast your bread then spread over the avocado. Top with some more olive oil and lemon juice and scatter over the chopped chillies. For an extra kick I add a sprinkling of cayenne pepper but you could easily skip this if you don’t like too much heat.
